Today's standard containers are made of concrete, steel or vetroresina, but because of these „dead“ materials the casks are not permeable to air. They are used to preserve the fruity flavour and briskness of the wines and to avoid any reaction of the wine with oxygen. Whereas a wooden barrel guarantees the optimum oxygen proportion which is fundamental for stimulating and achieving the maturing process of first-class wines. This can only be guaranteed by the fine, natural pores of air-permeable wood. Every coating process that seals these pores (e.g. with lacquer or tar) questions the function of wooden barrels. Because of the wooden cask's natural preconditions, wine escapes through the pores of the staves may sporadically appear. It is impossible for the cooper to ascertain that the pores are 100% impermeable at any stage of the maturing process. Anyway, natural products are self-regulating: the few minimal liquid escapes cause the pores to well up and seal themselves or you close them yourself with the help of a little wooden peg or a cotton wad.
